Will you give me some advice about exercise?

Ok so basically I cant go running or jogging for very long because I have knee problems and running causes my knees to give way, I have decided to powerwalk instead do you think 1hour of powerwalking a day is sufficent? Or should I be doing more?Will you give me some advice about exercise?
My girlfriend suffers from knee problems and on my exercise and diet plan she lost 23 lbs (I lost 60lbs 3 years ago, still kept it off). If you have bad knees you want to do 30 minutes a day on an elliptical machine (considered to be low-impact running). Do not run or jog because that is high-impact excercise and is bad for your knees. Combine that with limiting your carbohydrate intake to 30-40 grams per day (one carb meal a day) and you will achieve your goal.Will you give me some advice about exercise?
