Please, more advice about sesame oil in Chinese cuisine ?

Hi - when / how do you use *untoasted* sesame oil in Chinese cuisine? I am accustomed to only the toasted oil.

Thank you

Use it the same way you would use a toasted sesame oil, it is just a milder flavour. Just don't use it to fry or saute. Please, more advice about sesame oil in Chinese cuisine ?
You'd probably use it solely for frying.

Toasted sesame oil has a lower smoke point than the untoasted version. Both are used mainly for flavoring, and even when I use the toasted when frying or sauteeing, it's done as a small drizzle (or as part of my marinade) when there are other oils in the pan - solely for it's flavor.

I know some Indian cuisines use untoasted sesame oil for frying - it's the only use I can think of, though I'd never consider using it as my ';oil of choice';, ever.

Hope that helps! :)
